The dog days of summer will soon be upon us as we in the GTHA (not so) patiently wait for stage 3 of Ontario’s reopening plan. But watching the numbers rise in the USA as bars and indoor seating at restaurants forges ahead, I have no plans to go anywhere to get my drink on anytime soon.
I touch things and I touch my face pretty regularly and that has been a nearly impossible and incredibly stressful habit to break. We had a long awaited visit with my cousin and his wife last weekend and my husband watched in horror as the face touching escalated with every drink.
I am a hugger and I am a toucher. Which unfortunately intensifies one hundred fold when I consume adult beverages with people I love and have not seen for literally months. The need for human companionship, especially if you live alone, is higher than ever right now. This undoubtedly only makes it harder to stay at home as we inch our way to reopening.
Think of all the money you have been saving!
In my first venture out into the world of Covid dining for brunch this past Sunday, I ordered a vodka soda to accompany my eggs benny (minus the English muffin of course!). The server asked me “Do you have a vodka preference?” I laughed and answered, my inflection raising at the end as if I was asking her a question “the cheapest?” Well the cheapest turned out to be a $10 drink. We ALL know the markup at bars is insane. And we accept it and continue on our merry way caring less and less with every drink about cost, carbs and tomorrow’s hangover.
Absolutely support your local watering hole, they need it now more than ever! But if you are not feeling like now is the right time for you to step out for a night of galavanting and socializing, add my sugar free lemon-lime drop and pina colada to your summer drink menu. (And don’t forget my skinny margarita, too!)

Keto Delicious Skinny Lemon Lime Drop
Serves 4 (or 1. No judgment!)
- 6oz vodka
- 2oz fresh lemon juice
- 1oz lime juice
- 1/2 cup powdered erythritol (or sweetener of choice to taste)
- Granular monk fruit
- Ice
- Lemon/lime rind
Wizz up the lemon & lime juice, vodka and erythritol in a blender with some ice to drink it slushy or use a shaker filled with ice and shake it until frosty. Pour into a frosted glass rimmed with the granular monk fruit and a twist of lemon and/or lime rind.

Nutrition Information per serving (4): 145 cal, 0g fat, 2g carb, .10g fiber, 0g sugar, 0g protein, 1.9g NET carb (from the lemon & lime juices)!
Serves 4-6
(You may not want to go this one alone as it is higher in carbs & sugars)
- 1 cup of full fat coconut milk/cream
- 6-8 oz rum (I like dark rum in mine)
- 1 oz sugar free pineapple syrup (I love Jordan’s sugar free syrups)*
- ¼-½ cup powdered erythritol (or sweetener of choice to taste)
- 1 oz fresh lime juice
- Ice
- Toasted coconut (optional)
Wizz up the ingredients (except the toasted coconut) in a blender with some ice. Use as much or as little ice as you like. Pour into a frosted glass rimmed with toasted coconut and a lime wedge.

*If you can’t find sugar free pineapple syrup try sugar free pineapple water enhancer (to taste)
This is not any every day drink, as it has natural sugars from the coconut milk and it is fairly high in calories and net carbs per serving. Just don’t over indulge too often and pair it with some super low carb snacks.
