Happy fall to you all! I hope you have all made it through the summer unscathed and ready to either start your keto journey or continue on fighting the good (keto) fight. With summer at an end, the sweet delicious fruits that tempt the keto lifer to overindulge (especially this one!) are finally making their exit and that may kick some sweet cravings into overdrive.
I have talked about sugar substitutes before and I hope you have found the one that suits your personal taste (I prefer monk fruit and erythritol). Once you have, there are many ways to incorporate it into your routine to allow a little (virtually guilt free) sweetness into your life.
That doesn’t mean baking, necessarily. Baking is definitely time consuming and not something everyone enjoys doing.
What is a fat bomb and how do you create one?
A quick, and most popular alternative to baking is a “fat bomb.” A fat bomb is generally just a blend of (softened) cream cheese, powdered sugar substitute, and your favourite flavouring and/or keto friendly toppings such as:
- Nuts and seeds
- Sugar free flavoured syrups (watch the sweetness levels with your sweeteners and syrup mixes. Play around and make it to your taste!)
- Toasted coconut
- Sugar free chocolate (or in small amounts 90% dark, but watch the carb count!)
- Cocoa powder
- Nut butters
Throw cream cheese and sweetener in a bowl, and give it a good whip. Add your other ingredients of choice and roll them up in to balls or shape in a silicone mold. Refrigerate for an hour and voila! A super quick treat that you can pop on the go, and maintain your state of ketosis.
(You can also make savory fat bombs as well using cheeses and bacon or really anything keto friendly, because just about everything works with cream cheese!)
NEED that piece of chocolate cake, though?
Not loving the thought of a creamy fat bomb? Need something with a little more substance? There is hope! I love to bake keto treats and I have the time on my hands right now to do it. However, just (late) last night I came down with a major sweets craving that needed to be dealt with asap. I am proud to say that at 12 a.m this morning, my 90 second chocolate cake was born, and I have included that fabulous recipe for you. This super quick, rich chocolatey cake is a game changer. I despise that term (it is just so loosely used), but I have to say, I think you may agree after making it.
I know it may seem next to impossible to win the battle of the sweets, but don’t give in! There are delicious alternatives out there to help you win that fight, and I will be there in your corner cheering you on. As Covid-19 numbers rise again, I say to you all: continue to be safe and be kind. Xo
Keto Delicious 90 second Microwave Chocolate Cake
- 1oz unsweetened chocolate
- 2 tbsp coconut oil (divided)
- 3 tbsp fine almond flour
- 1 large egg
- 2 tbsp granulated sugar substitute (or to taste)
- 1 tsp baking powder
- 1 tsp vanilla
- Crushed nuts/seeds (if desired)
- Heavy whipping cream (if desired)
In the microwave, melt the chocolate and 1 tbsp of the coconut oil in a glass bowl for 30 seconds. Stir and put on for 15 second increments if more time is needed, being careful not to burn the chocolate (45 seconds will likely be enough).
Mix the rest of the ingredients in a separate bowl and add the melted chocolate, stirring quickly.
Pour batter into a sprayed or greased ramekin (I use butter and a 16oz dish). Top with crushed nuts (added crunch, but not necessary).
Bake in the microwave for 90 seconds (or the oven for about 10 minutes at 350 degrees). While baking, whip up some heavy cream if you like, for that final touch.
This rich cake is more than enough to share (which is recommended….or not! Just remember to divide the nutrition info provided into how many pieces you cut it into!)
